Sri Lankan Egg Curry

Egg curry is the frugal hero of Sri Lankan cooking, the way a dozen eggs become a feast when the curry is right. Soft-boiled eggs are peeled, lightly fried until the whites blister, then simmered in coconut milk with tomatoes and curry leaves. It is the Friday-night favorite in families that skip meat, and it satisfies like the richest meat curry. It is also one of the fastest curries in the repertoire, and a wonderful way to use up eggs before they go to waste.

The eggs soak up the gravy around them, and the brief frying gives the whites a chewy, browned edge that holds up to simmering. The sauce is milder than a meat curry, smooth and a little sweet from the tomatoes, with curry leaves and cinnamon in the background. Serve it with rice or hoppers, and spoon extra gravy over everything. The eggs soak up even more flavor overnight, so leftovers might be the best part.

Step by stepInstructions

  1. Place the eggs in a pot of cold water, bring to a boil, and cook for 8 minutes. Drain, cool under running water, and peel.
  2. Heat the coconut oil in a skillet over medium heat. Add the peeled eggs and fry, turning, for 3 to 4 minutes, until the whites are golden in spots. Set aside.
  3. In the same oil, cook the onion, garlic, and ginger for 4 minutes until soft. Add the curry powder, chili powder, turmeric, cinnamon, curry leaves, and salt and stir for 1 minute.
  4. Add the tomato and cook for 3 minutes, until soft. Pour in the coconut milk and water and bring to a gentle simmer.
  5. Add the eggs, prick them with a fork, and simmer uncovered for 8 to 10 minutes, spooning sauce over them, until the gravy thickens slightly.
  6. Serve hot over rice with extra gravy.

💡 Chef tips & storage

Boil the eggs just until set and peel them under cool water for clean shells. Prick each egg a few times with a fork before simmering so the gravy seeps in.
