The History Behind This Recipe

The Sloppy Joe's origin is murky — a café owner in Sioux City, Iowa named Joe is one candidate — but its popularity is not in doubt. A sweet-and-tangy beef mixture piled onto soft buns became the great American family dinner of the 1950s, beloved by kids and nostalgic for adults. Messy by design, it's best eaten over the sink or with a stack of napkins.

Ingredients (6 sandwiches)

• 1 lb (450g) ground beef
• 1 small onion, finely diced
• 1/2 green bell pepper, finely diced (optional)
• 2 cloves garlic, minced
• 1 cup (240 ml) ketchup
• 2 tbsp brown sugar
• 1 tbsp Worcestershire sauce
• 1 tbsp yellow mustard
• 1 tsp chili powder
• 1/2 cup (120 ml) water or beef broth
• 6 soft hamburger buns
• Salt and black pepper, to taste

Instructions

1. Brown the beef in a large skillet over medium-high heat, breaking it up. Drain off most of the fat.
2. Add the onion, bell pepper, and garlic. Cook until softened, 4–5 minutes.
3. Stir in the ketchup, brown sugar, Worcestershire, mustard, chili powder, and water.
4. Simmer 10–15 minutes, until thick and saucy. Season with salt and pepper.
5. Toast the buns and pile the mixture onto the bottoms. Serve hot.
