Classic Eggs Benedict

Eggs Benedict is widely credited to 1894 New York City, where a hungover Wall Street broker named Lemuel Benedict allegedly ordered poached eggs, bacon, and hollandaise at the Waldorf Hotel to cure his hangover. The maître d’ loved the combination so much he added it to the menu, and it has remained a brunch icon ever since.

Elegant, rich, and a true brunch showstopper

Poached eggs and Canadian bacon sit atop toasted English muffins, blanketed in a silky, buttery hollandaise sauce.

Step by stepInstructions

  1. Toast the English muffins and warm the Canadian bacon in a skillet.
  2. Bring a pot of water with vinegar to a gentle simmer and poach the eggs 3 minutes each.
  3. For the hollandaise, whisk egg yolks and lemon juice over a double boiler until thickened.
  4. Slowly drizzle in melted butter, whisking constantly, until smooth. Season with salt and cayenne.
  5. Top each muffin half with bacon and a poached egg.
  6. Spoon hollandaise over the top and serve immediately.

💡 Chef tips & storage

Use the freshest eggs possible for poaching — they hold their shape much better. Hollandaise is best made just before serving, as it doesn't reheat well.
