Cajun Blackened Chicken with spicy seasoning and lemon wedges

Blackening as a cooking technique was popularized in the 1980s by Louisiana chef Paul Prudhomme, who coated fish and meat in a bold spice blend and seared it in a screaming-hot cast iron skillet to create a deeply charred crust. The technique quickly spread nationwide and became a defining preparation of Cajun-inspired American cooking.

Bold, spicy, and charred to perfection

Chicken breasts are coated in a bold Cajun spice blend and seared in a hot skillet until deeply charred and flavorful.

Step by stepInstructions

  1. Mix the paprika, garlic powder, onion powder, cayenne, thyme, oregano, salt, and pepper.
  2. Brush the chicken with melted butter, then coat generously with the spice mixture.
  3. Heat a cast iron skillet over high heat until very hot.
  4. Sear the chicken 4-5 minutes per side until deeply charred and cooked through.
  5. Let rest 5 minutes before slicing.
  6. Serve with rice or a fresh salad.

💡 Chef tips & storage

Make sure your skillet is smoking hot before adding the chicken, and turn on your kitchen exhaust fan, since blackening produces a lot of smoke. Pounding the chicken to an even thickness ensures it cooks through without burning the spice crust.
