  1. Melt the butter in a large pot and sauté the onion until softened.
  2. Add the garlic and cook 1 minute.
  3. Stir in the tomatoes and vegetable broth, breaking up the tomatoes.
  4. Simmer 20 minutes, then stir in the basil and sugar.
  5. Blend the soup until smooth using an immersion blender.
  6. Stir in the heavy cream and season with salt and pepper before serving.

💡 Chef tips & storage

Blending in batches in a countertop blender works too, but be sure to vent the lid, as hot liquid expands. A pinch of sugar balances the acidity of the canned tomatoes.
