Baked potato soup grew out of American diner and steakhouse menus in the late 20th century, inspired by the classic loaded baked potato topped with cheese, bacon, and sour cream. Transforming those toppings into a creamy soup base became a beloved cold-weather comfort dish nationwide.

Creamy, cheesy, and loaded with toppings

Tender potatoes are simmered into a rich, creamy soup base and topped with cheese, bacon, and green onions for the ultimate comfort bowl.

Step by stepInstructions

  1. Simmer the potatoes in chicken broth until very tender, about 15-20 minutes.
  2. Mash about half the potatoes right in the pot for a thicker texture.
  3. In a separate pan, melt the butter, whisk in the flour, and cook 1 minute, then whisk in the milk until smooth.
  4. Stir the milk mixture into the potato pot and simmer until thickened.
  5. Stir in the sour cream and 1 cup of the cheese until melted.
  6. Season with salt and pepper, and top each bowl with remaining cheese, bacon, and green onions.

💡 Chef tips & storage

Mashing part of the potatoes directly in the pot gives the soup a naturally thick, hearty texture without extra thickeners. Keep toppings on the side so everyone can customize their bowl.
