Instructions
- In a large bowl, combine the buttermilk and hot sauce. Add the chicken, cover, and refrigerate at least 2 hours (overnight is best).
- In a shallow dish, whisk the flour with paprika, garlic powder, onion powder, cayenne, salt, and pepper.
- Dredge each piece in the seasoned flour, shake off the excess, and let rest on a rack 10 minutes (this helps the crust cling).
- Heat 1 inch of oil in a heavy skillet or Dutch oven to 350°F (175°C).
- Fry the chicken in batches, without crowding, 12–15 minutes, turning occasionally, until deep golden and cooked through (165°F / 74°C at the thickest part).
- Drain on a wire rack over paper towels. Serve warm or at room temperature.
