Mountain cornbread is savory, not sweet — baked in a hot iron skillet so the edges crackle and the middle stays tender.

  1. Preheat the oven to 425°F. Put 1 tablespoon of fat in a 10-inch cast-iron skillet and place it in the oven to heat.
  2. Whisk the cornmeal, salt, baking powder, and baking soda in a bowl.
  3. Whisk the buttermilk and egg; stir into the dry ingredients along with the 2 tablespoons of fat until just combined.
  4. Swirl the hot fat around the skillet, pour in the batter, and bake 22-25 minutes until golden and pulling from the sides.
  5. Cool 10 minutes and serve warm with butter, soup beans, or chow chow.
