Kalua Pork - smoky shredded pork over rice with cabbage

Pork shoulder smoked low and slow, then shredded and seasoned simply with Hawaiian sea salt.

The imu pit classic

Traditionally buried in an imu, kalua pork is smoky, salty, and impossibly tender — the slow cooker version is nearly as good.

Step by stepInstructions

  1. Rub the pork all over with the salt and liquid smoke.
  2. Heat the oil in a large pan and sear the pork on all sides until browned.
  3. Place in a slow cooker with the water, cover, and cook on low 8 hours, until the pork falls apart.
  4. Shred the pork with two forks, mixing the juices through.
  5. Serve over rice with cabbage — or in a laulau spread.

💡 Chef tips & storage

Alaea salt is traditional, but kosher salt works. The liquid smoke mimics the imu's smoky depth — don't skip it.
