Panko-crisp chicken cutlets with bulldog-style katsu sauce, shredded cabbage, and rice — the classic local plate.

Step by stepInstructions

  1. Season the chicken with salt and pepper. Set up three dishes: flour, beaten eggs, panko.
  2. Dredge each breast in flour, dip in egg, then press into the panko.
  3. Heat 1/2 inch of oil to 350°F and fry the cutlets 3-4 minutes per side until deep golden and cooked through.
  4. Whisk the katsu sauce ingredients together.
  5. Slice the katsu and serve over rice with cabbage, drizzled with sauce.

💡 Chef tips & storage

Press the panko on firmly for maximum crunch. Pound the chicken even so it cooks through with the crust.
