Chicken marinated in sweetened shoyu with mochiko flour in the batter — crispy, sweet-salty, and utterly local.

Step by stepInstructions

  1. Whisk all the marinade ingredients into a thick batter.
  2. Coat the chicken in the batter and marinate 4 hours or overnight.
  3. Heat 1/2 inch of oil to 350°F.
  4. Fry the chicken in batches 5-6 minutes, turning, until deep golden and cooked through.
  5. Drain and serve garnished with sesame seeds and green onion.

The batter is thin — that's right. Don't overcrowd the pan; the crust needs room to crisp.
