Step by stepInstructions

  1. Brown the ground pork in a large pot, breaking it up, about 5 minutes. Add the livers and cook 3 minutes more.
  2. Add the onion, bell pepper, and celery and cook 5 minutes. Add the garlic.
  3. Stir in the rice and cook 2 minutes, then pour in the stock and add the Cajun seasoning, paprika, and cayenne.
  4. Bring to a boil, cover, and simmer 18-20 minutes until the rice is tender.
  5. Fluff with a fork, stir in the parsley, and season with salt and pepper.

💡 Chef tips & storage

Finely chop the livers so they disappear into the rice — they add richness without being overwhelming. This is the classic side for any Cajun plate.
