Step by stepInstructions

  1. Whisk the cornmeal, flour, sugar, baking powder, salt, Cajun seasoning, and cayenne.
  2. Stir in the corn and onion. Add the egg and buttermilk and mix until just combined.
  3. Heat 1 1/2 inches of oil in a deep skillet to 365°F (185°C).
  4. Drop the batter by rounded spoonfuls and fry 2-3 minutes, turning once, until deep golden.
  5. Drain on paper towels and serve hot.

Don't overmix the batter — lumps are fine and keep the fritters tender. Drop them in by spoonful and fry in small batches so the oil stays hot.
