  1. Make a roux: heat the oil in a large pot, whisk in the flour, and cook, stirring constantly, until it reaches a dark peanut-butter brown, about 10-12 minutes.
  2. Add the onion, bell pepper, and celery and cook 5 minutes. Add the garlic and cook 1 minute more.
  3. Stir in the tomatoes, stock, Cajun seasoning, thyme, and cayenne. Simmer 20 minutes.
  4. Season the catfish with salt and pepper, add to the pot, and simmer 8-10 minutes until the fish flakes.
  5. Serve over hot white rice.

💡 Chef tips & storage

Add the catfish at the end and simmer just until it flakes — overcooking turns it tough. Serve over white rice with plenty of the sauce.
