  1. Heat the oil in a large pot and cook the onion, bell pepper, and celery until soft, 5 minutes. Add the garlic.
  2. Stir in the tomatoes, tomato paste, stock, Cajun seasoning, thyme, cayenne, and bay leaves. Simmer 20 minutes until thickened.
  3. Season the shrimp with salt and pepper, add to the sauce, and simmer 5-6 minutes until pink and curled.
  4. Remove the bay leaves and adjust seasoning.
  5. Serve over rice, garnished with parsley.

💡 Chef tips & storage

Add the shrimp at the end and simmer just until they turn pink — any longer and they toughen. Serve over rice with hot sauce on the side.
