  1. Melt the butter in a large pot and cook the onion, carrots, and celery until soft, about 6 minutes.
  2. Whisk in the flour and cook 2 minutes.
  3. Gradually whisk in the broth, beer, and milk; bring to a gentle simmer and cook 10 minutes.
  4. Reduce the heat to low and whisk in the cheddar a handful at a time until smooth.
  5. Stir in the Worcestershire, mustard, salt, and pepper. Serve topped with popcorn or croutons.
