Utica tomato pie is the pizza’s rustic, sauce-forward cousin — a thick, focaccia-like crust topped with a bright tomato sauce, garlic, and Romano, baked until the edges are crisp. Unlike pizza, it’s served at room temperature, and the sauce is the star.

  1. Mix the flour, yeast, salt, water, and 2 tbsp olive oil into a dough and knead 8 minutes. Let rise until doubled, about 1 hour.
  2. Heat the oven to 450°F (230°C) with a pizza stone if you have one. Simmer the tomatoes, garlic, oregano, and pepper for 10 minutes.
  3. Press the dough into a generously oiled 12x18-inch sheet pan, dimpling the surface.
  4. Spread the tomato sauce over the dough and sprinkle with the Romano.
  5. Bake 20-25 minutes until the crust is golden and crisp. Cool to room temperature before slicing.

Keep the sauce chunky and spread it generously — the crust should soak up its flavor. Serve at room temperature, never hot out of the oven, the way Utica does it.
