Salt potatoes are the pride of Syracuse, New York — small new potatoes boiled in water so salty it’s practically brine, then served with a puddle of melted butter. The salt crusts the skins while the insides stay creamy, and the result is dangerously simple and good.

Tiny potatoes boiled in heavily salted water until creamy inside and salt-crusted outside, finished with melted butter.

Step by stepInstructions

  1. Rinse the potatoes and place them in a large pot. Add the salt and water.
  2. Bring to a boil and cook until the potatoes are fork-tender, about 20-25 minutes.
  3. Drain well and return to the pot briefly to dry.
  4. Serve hot with melted butter poured over, sprinkled with parsley.

💡 Chef tips & storage

Don't peel them — the salt-crusted skin is the point. Use small new potatoes so they cook evenly, and serve with plenty of melted butter.
