Oregon grows most of America’s hazelnuts — roasted with green beans and brown butter, they turn a simple side into a celebration.

Step by stepInstructions

  1. Preheat the oven to 425°F.
  2. Toss the green beans with the olive oil, salt, and pepper on a baking sheet.
  3. Roast 12-15 minutes, tossing once, until tender-crisp with charred spots.
  4. Melt the butter in a skillet over medium heat until it smells nutty; add the hazelnuts and garlic and cook 1 minute.
  5. Toss the beans with the brown butter-hazelnut mixture and lemon juice; finish with parsley.
