Firm, flaky rockfish from Pacific waters makes a chowder that’s hearty and bright, with sweet corn and cream.

Step by stepInstructions

  1. Cook the bacon in a Dutch oven until crisp; remove, leaving the fat.
  2. Cook the onion and celery in the fat until soft; add the butter and flour and cook 2 minutes.
  3. Whisk in the broth, add the potatoes, and simmer 12 minutes until tender.
  4. Stir in the corn, milk, and cream and simmer 5 minutes.
  5. Add the rockfish and cook gently 5-6 minutes until it flakes. Season with salt, pepper, and paprika; top with bacon and parsley.

💡 Chef tips & storage

Add the fish at the end so it stays flaky. Any firm white fish — cod, halibut, lingcod — works here.
