Soul food green beans and potatoes

Fresh green beans and potatoes simmered together with smoked meat until soft and deeply savory.

Slow-cooked till silky

Green beans and new potatoes cooked down with smoked pork until the beans are soft and the broth is rich — the side that eats like a meal.

Step by stepInstructions

  1. Cook the salt pork in a large pot until some fat renders; add the onion and cook until soft, about 4 minutes.
  2. Add the garlic, green beans, potatoes, broth, pepper, and thyme.
  3. Bring to a boil, reduce to a simmer, cover, and cook 45-60 minutes until the beans are very tender and the potatoes are soft.
  4. Season with salt, stir in the butter, and cook 10 minutes more.
  5. Serve hot with the pot liquor and cornbread.

💡 Chef tips & storage

Soul food green beans are meant to be cooked soft, never crisp. Serve the beans with some of the seasoned pot liquor spooned over.
