Classic skillet cornbread studded with roasted green chiles and sharp cheddar for a smoky, savory kick.

Smoky heat in every crumb

Cornbread goes Southwestern with roasted green chiles and sharp cheddar baked in a screaming-hot cast-iron skillet.

Step by stepInstructions

  1. Preheat the oven to 400°F. Put the butter in a 10-inch cast-iron skillet and place it in the oven to melt.
  2. Whisk the cornmeal, flour, sugar, baking powder, and salt in a bowl.
  3. Whisk the eggs, buttermilk, and oil; pour into the dry ingredients and stir until just combined.
  4. Fold in the cheddar and green chiles.
  5. Swirl the melted butter around the hot skillet, pour in the batter, and bake 22-25 minutes until golden. Cool 10 minutes before slicing.

💡 Chef tips & storage

The hot skillet gives the crust its crackle. Drain the chiles well so the batter stays light.
