Burnt ends are the holy grail of Texas barbecue — the rich, caramelized point-cut pieces of a smoked brisket, cubed, glazed with barbecue sauce, and smoked again until they’re sticky, smoky, and intensely beefy. If you’ve ever had brisket, you’ve wanted the burnt ends.

Chef Emily presents Burnt Ends

The holy grail of barbecue

Caramelized brisket point cubes, glazed and re-smoked until sticky and intense — burnt ends, the barbecue treasure.

Step by stepInstructions

  1. Heat the smoker to 275°F (135°C).
  2. Cut the smoked brisket point into 1-inch cubes.
  3. Whisk the barbecue sauce, brown sugar, butter, paprika, and pepper. Toss with the cubes until coated.
  4. Spread the cubes in a single layer in a foil pan and return to the smoker.
  5. Smoke 45-60 minutes, stirring once, until the edges are dark and sticky. Serve hot.

💡 Chef tips & storage

Start with a smoked brisket point — this recipe finishes already-smoked meat. Cube the pieces generously (about 1 inch) so they stay juicy, and don't skip the final glaze-and-smoke step.
