Beef Chimichangas - crispy fried chimichangas with beef and cheese

Chimichangas are the Tex-Mex indulgence that takes the burrito one step further — flour tortillas stuffed with seasoned beef and cheese, then fried until the shell is golden and shatteringly crisp. They’re the deep-fried crown jewel of Tex-Mex menus.

Chef Emily presents Beef Chimichangas

The deep-fried burrito

Flour tortillas stuffed with seasoned beef and cheese, fried until golden and crisp — the Tex-Mex chimichanga.

Step by stepInstructions

  1. Brown the beef in a skillet, breaking it up, about 5 minutes. Stir in the taco seasoning and water and simmer 5 minutes.
  2. Warm the tortillas. Spread a spoonful of refried beans down the center of each, then add the beef and cheese.
  3. Fold the sides in and roll tightly into burritos. Secure with toothpicks and chill 15 minutes.
  4. Heat 1 inch of oil to 375°F (190°C).
  5. Fry the chimichangas 2-3 minutes per side until golden and crisp. Drain and serve with the toppings.

💡 Chef tips & storage

Chill the filled burritos for 15 minutes before frying so they hold together. Serve with sour cream, guacamole, and a squeeze of lime.
