Arroz de Carreteiro

Arroz de carreteiro was born on the trails of southern Brazil, where carreteiros (wagon drivers) cooked rice with the dried beef they carried on long journeys. Today it is a beloved homey favorite: rice simmered in a rich, meaty broth until every grain is savory.

One pot, cowboy style

The rice soaks up beef broth and rendered bacon fat until it is plump and deeply flavorful, studded with crisp-edged beef and smoky sausage. It is rustic, filling, and tastes like campfire comfort.

Step by stepInstructions

  1. If using dried salted beef, soak it in cold water for a few hours or overnight and rinse well; otherwise, pat the beef dry.
  2. In a large pot or Dutch oven, render the bacon over medium heat for 5 minutes until crisp, then remove it with a slotted spoon.
  3. Brown the beef in the bacon fat, in batches, for 4 to 5 minutes until deeply colored, then set aside with the bacon.
  4. Add the olive oil, onion, garlic, tomatoes, and bell pepper to the pot and cook 5 minutes until softened.
  5. Return the beef and bacon to the pot, add the rice, and stir for 2 minutes to toast it in the fat.
  6. Pour in the beef broth, add the bay leaf, bring to a boil, then cover and simmer over low heat for 18 to 20 minutes, until the liquid is absorbed and the rice is tender.
  7. Let the rice rest off the heat for 5 minutes, fluff with a fork, remove the bay leaf, and stir in the parsley.

Any leftover roast or steak works beautifully here — the dish was invented to use up cooked meat. Do not stir once the pot is covered; that is how Brazilian rice gets its perfect, separate grains.
