Quindim

Quindim is the golden jewel of Brazilian desserts — a dense, glossy baked custard made almost entirely of egg yolks, sugar, and coconut, with a bright yellow dome and a caramelized bottom. It comes from the Afro-Brazilian culinary tradition of Bahia, where African cooks turned the egg yolks left over from Portuguese pastry-making into something spectacular. Sliced thin, it is intensely rich, and it is one of Brazil’s most beloved celebration sweets.

Why this recipe works: Quindim is yolks and more yolks — the natural richness and lecithin of the egg yolks create a dense, silky custard that needs no cream or milk. Blended with sugar, butter, and grated coconut, it is baked in a water bath in small molds lined with caramel or butter. The result is a shiny, deep-yellow dome with a tender, almost chewy texture and a caramel glaze on top.

Key ingredients

  • Egg yolks: the heart — save the whites for meringues.
  • Sugar: the sweetness that balances the richness.
  • Grated coconut: fresh or dried — the texture and flavor.
  • Butter: for richness and unmolding.

Tips for the perfect quindim

Whisk the yolks and sugar until completely smooth — do not whip air into them. Stir in the melted butter and coconut, and strain the mixture if you want a perfectly silky custard. Pour into buttered (or caramel-lined) individual molds, set them in a water bath, and bake at 325°F until set, about 40 to 50 minutes. Cool completely, then chill before unmolding — run a knife around the edge and invert onto a plate. Serve in thin slices; a little goes a long way.

Variations and storage

Add a splash of orange blossom water or a few drops of vanilla. Quindim keeps 5 days in the fridge, wrapped, and is best served chilled. It does not freeze well — the custard weeps — so make it fresh for the occasion.

Step by stepInstructions

  1. Preheat the oven to 325°F and generously butter 8 small ramekins or one 8-inch ring mold.
  2. In a large bowl, whisk the egg yolks with the sugar for 3 to 4 minutes until pale and smooth.
  3. Stir in the shredded coconut, melted butter, and salt, mixing until fully combined.
  4. Pour the mixture into the buttered molds, filling them about three-quarters full.
  5. Place the molds in a deep baking dish and pour hot water around them until it comes halfway up the sides (a water bath).
  6. Bake for 45 to 50 minutes, until the tops are deep golden and the custard is set with a slight jiggle in the center.
  7. Cool completely in the water bath, then refrigerate for at least 2 hours before unmolding onto a plate, glossy side up.

💡 Chef tips & storage

Whisk the yolks and sugar well — that is what gives quindim its satiny texture. Do not overbake or the custard will weep; a gentle jiggle in the center is the perfect doneness sign.
