Sorrentinos are Argentina’s answer to ravioli — large, round, and usually filled with ricotta, mozzarella, and ham. Legend says they were invented in a Mar del Plata restaurant whose owner was from Sorrento, Italy, and they have been a Sunday tradition ever since.

The pasta is silky and tender, and the filling is creamy and mild, with a gentle nutmeg warmth and a salty kiss of ham. Tossed in simple tomato sauce and showered with Parmesan, they are pure comfort.
