Tiradito

Tiradito was born of Lima’s Japanese-Peruvian fusion, inspired by sashimi’s clean cuts but dressed like ceviche in a sharp citrus leche de tigre. Unlike ceviche, there is no onion and the fish is sliced thin, letting the pure flavor of the fish and the chile speak.

Sashimi’s cut, ceviche’s spirit

Each ribbon of fish is cool, silky, and barely ‘cooked’ by the lime, while the sauce — fiery with aji limo, bright with citrus — coats it in a delicate heat. It is elegant, fast, and the most refined thing on the Peruvian table.

Step by stepInstructions

  1. Freeze the fish briefly — 15 minutes — so it slices cleanly, then cut it across the grain into thin, sashimi-style ribbons.
  2. Whisk the lime and lemon juices with the aji limo, garlic, ginger, stock, and salt in a bowl until the salt dissolves.
  3. Arrange the fish ribbons in a single layer on a chilled platter, overlapping them slightly.
  4. Spoon the leche de tigre over the fish, coating the ribbons without drowning them.
  5. Garnish with cilantro and thin slices of aji limo, and serve immediately, chilled.
  6. Season with a final pinch of flaky salt at the table, if you like.

💡 Chef tips & storage

Freeze the fish briefly and use the sharpest knife you own for clean slices. Tiradito is a same-moment dish — dress it at the table and never refrigerate leftovers.
