Pandebono

Pandebono comes from the Valle del Cauca, where bakers discovered that yuca starch and fresh cheese make a dough that puffs into the most addictive rolls in Colombia. Served with hot chocolate or coffee at breakfast, they are a national obsession.

The crust is thin and lightly golden, but the inside is the star: soft, chewy, and stretchy with melted cheese in every bite. Slightly sweet and distinctly savory, pandebono needs nothing but a hot drink to be perfect.

Step by stepInstructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment.
  2. In a bowl, mix the yuca starch, masarepa, sugar, and baking powder, then work in the crumbled cheese with your fingers.
  3. Add the egg and milk and knead until a smooth, slightly sticky dough forms; add a splash of milk if it crumbles.
  4. Roll the dough into 12 small balls and arrange them on the sheet, spaced apart.
  5. Bake for 18 to 20 minutes, until puffed and golden — serve warm, when the centers are soft and stretchy.

💡 Chef tips & storage

Use yuca starch (almidón de yuca), not tapioca pearls — the flour-like starch is what gives the signature chew. Pandebono is best the same day; leftover rolls refresh in a 350°F oven for 5 minutes.
