Natilla Navideña

Natilla navideña is Colombia’s Christmas custard — a thick, silky pudding of milk, panela (unrefined cane sugar), and cornstarch, perfumed with cinnamon sticks and cloves, served in small bowls and eaten with a spoon — traditionally alongside buñuelos, the fried cheese balls that are its inseparable Christmas partner. Its pale, creamy color and warm spice scent are as much a part of Colombian Christmas as the lights and music.

Why this recipe works: Natilla is a stovetop custard thickened with cornstarch — no eggs, no oven. Milk and panela are simmered with cinnamon and cloves until deeply flavored, then thickened with a cornstarch slurry into a glossy, spoon-standing pudding. It is poured into a serving dish, chilled until set, and dusted with cinnamon. The panela gives it a caramel-like depth that white sugar cannot match.

Key ingredients

  • Whole milk: the base.
  • Panela or brown sugar: the unrefined sweetness — panela is traditional.
  • Cinnamon sticks and cloves: the Christmas perfume.
  • Cornstarch: the thickener.
  • A pinch of salt and a little butter: richness and balance.

Tips for the perfect natilla

Simmer the milk with the panela, cinnamon, and cloves for 15 to 20 minutes so the flavors infuse, then remove the spices. Whisk the cornstarch into a little cold milk to make a slurry, then whisk it into the hot milk and cook over medium heat, stirring constantly, until the mixture thickens dramatically — about 5 minutes. Pour into a serving dish, smooth the top, and chill for at least 4 hours until fully set. Dust with ground cinnamon and serve cold, with buñuelos on the side.

Variations and storage

Add a splash of vanilla, a spoonful of coconut, or a ribbon of blackberry jam. Natilla keeps 4 days in the fridge, covered, and is served cold — it is the taste of a Colombian Christmas, available any time of year.

Step by stepInstructions

  1. In a large pot, heat 3 cups of the milk with the panela, cinnamon stick, cloves, butter, and coconut (if using) over medium heat, stirring until the panela dissolves.
  2. Whisk the cornstarch into the remaining 1 cup of cold milk until smooth.
  3. When the milk mixture is hot but not boiling, pour in the cornstarch mixture in a steady stream, whisking constantly.
  4. Cook over medium-low heat, stirring with a wooden spoon, for 15 to 20 minutes until very thick and glossy.
  5. Remove the cinnamon and cloves, stir in the vanilla, and pour into a serving dish.
  6. Cool to room temperature, then chill until set; dust with ground cinnamon before serving.

💡 Chef tips & storage

Stir constantly once the cornstarch goes in — natilla scorches quickly at the bottom. It keeps 4 days refrigerated and slices cleanly when fully chilled.
