Legend says pique macho was invented in Cochabamba when a truck driver demanded something macho after a long haul — so the cook piled everything onto one plate. Today it is the city’s party dish: tender beef, smoky sausage, crispy fries, and a riot of tomato, onion, and locoto in a glossy sauce.

The Truck Driver’s Feast

Juicy strips of beef and sausage swim in a thick, spicy tomato sauce that coats every fry. The heat comes from locoto peppers — use as much or as little as you dare — and a squeeze of lime and a cold beer are the only proper accompaniments.

Step by stepInstructions

  1. Fry the potatoes in hot oil until golden and crisp, then drain on paper towels and season with salt.
  2. In the same pan, sear the beef strips in batches over high heat until browned, about 2 minutes per batch, and set aside.
  3. Brown the sausage slices in the same pan, then set aside with the beef.
  4. Lower the heat, soften the onion in the remaining fat, then add the tomatoes, locoto, cumin, oregano, and beer; simmer for 8 to 10 minutes until the sauce is thick.
  5. Return the beef and sausage to the pan, toss to coat, and simmer for 5 more minutes.
  6. Pile the fries on a big platter, spoon the meat and sauce over them, and top with the halved eggs.

💡 Chef tips & storage

Brown the beef in batches — crowding the pan steams it instead of searing. Pique macho keeps 2 days in the fridge; reheat in a skillet and add fresh fries.
