Pacumutu is a generous platter from the Beni lowlands: a bed of rice topped with grilled meat and surrounded by the region’s staples — sweet fried plantain, soft boiled yuca, and a tangy onion-tomato salad. It is the kind of dish that turns a simple barbecue into a full spread.

The Beni Grill Plate

The meat — often beef, sometimes river fish — is simply seasoned and charred over fire, letting its juices soak into the rice below. The sweetness of the plantain, the creaminess of the yuca, and the bright crunch of the salad make every bite different.

Step by stepInstructions

  1. Boil the yuca in salted water for 20 to 25 minutes until tender, then drain and remove the fibrous core.
  2. Season the beef with salt and pepper and grill over high heat for 3 to 4 minutes per side for medium-rare; rest for 5 minutes, then slice.
  3. Fry the plantain slices in the oil until golden and caramelized, 2 to 3 minutes per side.
  4. Toss the tomatoes, onion, lime juice, cilantro, and a pinch of salt into a quick salad.
  5. Plate each serving with rice on the bottom, sliced meat on top, and the plantain, yuca, and salad arranged around.
