Locro is the Paraguayan grandmother of stews: large white corn kernels (locro corn) simmered for hours with beef, chorizo, and vegetables until the broth turns thick and milky. Rooted in the Andean tradition and adapted to Paraguayan taste, it’s the pot that simmers all day and feeds everyone who shows up.

The long simmer makes the corn soft and creamy while the beef melts into shreds, and the broth thickens into something almost silky. It’s a deeply savory, rib-sticking stew with a gentle sweetness from the corn — winter comfort in a deep bowl.

Step by stepInstructions

  1. Drain the soaked locro corn and set it aside.
  2. Heat the oil in a large pot over medium-high heat and brown the beef and pork in batches, 6 to 8 minutes total.
  3. Add the onion and cook 4 minutes, then the garlic, tomatoes, paprika, and cumin, and cook 3 minutes more.
  4. Add the locro, chorizo, broth, salt, and pepper; bring to a boil, then reduce to a gentle simmer.
  5. Cover and cook over low heat for 2 to 2 1/2 hours, stirring now and then, until the corn is soft and creamy and the meat is falling apart.
  6. Taste, adjust the salt, and serve hot in deep bowls, showered with parsley.

💡 Chef tips & storage

Soak the locro overnight — it cuts the cooking time and gives the creamiest texture. If using canned hominy, add it in the last 45 minutes. Locro keeps 4 days refrigerated and only gets better.
