- Boil the plantain chunks in the salted water until very tender, about 20 to 25 minutes.
- While they cook, heat 1 tablespoon of oil in a skillet and fry the salami slices over medium-high heat until the edges are curled and crisp, about 3 minutes per side. Set aside.
- In the same skillet, fry the cheese slices until golden on both sides, about 2 minutes per side, and fry the eggs sunny-side up or as you like them.
- Soften the onion rings in the remaining oil over medium-low heat, then add the vinegar, salt and pepper and cook 2 minutes more.
- Drain the plantains and mash them with the hot water and butter until completely smooth, working quickly to keep them fluffy.
- Plate each serving with a generous mound of mangú, a tangle of vinegar onions, salami, a fried egg and golden cheese slices, all hot and served immediately.
