A traditional Panamanian street treat — Raspao is the snow cone of Panama, a towering shave of ice drenched in brightly colored fruit syrup. Vendors shave the ice by hand or machine and pour on syrups of tamarind, mango, cherry or kola, sometimes finishing it with a drizzle of condensed milk. On a hot Panamanian afternoon, there is no better way to cool down.

Step by stepInstructions
- Simmer the tamarind pulp, sugar, water and salt in a saucepan for 10 minutes, mashing the pulp; strain through a fine sieve, pressing out the liquid.
- Let the syrup cool completely, then refrigerate until cold.
- Shave the ice in a blender or with an ice shaver until fluffy and snow-like.
- Pack the shaved ice into paper cones or cups and pour the syrup generously over the top.
- Finish with a drizzle of condensed milk, if using, and serve immediately with a spoon and straw.
💡 Chef tips & storage
Make the syrup ahead and keep it cold — the colder the syrup, the slower the ice melts. If you do not have an ice shaver, pulse ice in a blender in short bursts for a snowy texture.
