They arrive with warm tortillas, tajadas, chismol, and lime, made to be eaten with your hands.

  1. Whisk together the soy sauce, Worcestershire, garlic, cumin, oregano, olive oil, and pepper, and toss with the meat cubes
  2. Marinate in the refrigerator for one to two hours
  3. Thread the meat onto the soaked skewers, leaving a little space between pieces
  4. Grill over high heat, turning often, until charred on the outside and just cooked through, eight to ten minutes total
  5. Rest the skewers for a few minutes, then serve with warm tortillas, tajadas, chismol, and lime wedges

💡 Chef tips & storage

Alternate meat cubes with onion and bell pepper chunks for extra sweetness, as street vendors often do. Do not overcook — the soy marinade makes dry meat especially noticeable.
