Taramasalata — Greek fish roe dip whipped with olive oil and lemon

Taramasalata is the pale pink dip of Greek meze tables, made from cured fish roe whipped with bread or potato, olive oil, and lemon into a smooth, briny spread. It tastes of the sea in the best way.

Traditionally eaten during Lent and at festive tables, taramasalata is served with pita, raw vegetables, or bread. Good taramasalata should be thick enough to hold a swoosh — and dangerously easy to finish.

Step by stepInstructions

  1. Squeeze the soaked bread very dry. Boil the potato until tender, if using.
  2. In a food processor, blend the tarama, bread, potato, garlic, and lemon juice until smooth.
  3. With the machine running, stream in the olive oil slowly until the mixture is thick and creamy.
  4. Season with white pepper. Taste and add more lemon juice if needed.
  5. Chill 1 hour. Serve swooshed onto a plate with olive oil, pita, and crisp vegetables.

💡 Chef tips & storage

Rinse very salty tarama briefly under cold water, then pat it dry. The dip emulsifies best when everything starts at room temperature.
