  1. Soak the chickpeas overnight, or quick-soak: boil 2 minutes, then rest 1 hour. Drain.
  2. In a large pot, cook the onion in the olive oil until soft, about 5 minutes. Add the garlic and cook 1 minute more.
  3. Add the chickpeas, bay leaves, oregano, and water. Simmer gently 1 1/2 hours until tender.
  4. Season with salt and pepper and simmer 15 minutes more.
  5. Ladle into bowls, drizzle with olive oil, and serve with lemon wedges and parsley.
