  3. Off the heat, whisk in the eggs one at a time, then the vanilla. Return to low heat and stir 2 minutes until glossy; remove the zest.
  4. Layer 6-7 phyllo sheets in the dish, brushing each with butter. Pour in the custard and spread it evenly.
  5. Top with 6-7 more buttered phyllo sheets, tucking the edges in. Brush the top with butter and score into squares.
