  2. Gently separate the kataifi strands and spread half in the dish. Drizzle with half the butter. Repeat with the remaining kataifi and butter.
  3. Bake 30-35 minutes until golden and crisp. Meanwhile, simmer the water, 2 cups sugar, cinnamon stick, and lemon zest for 10 minutes to make the syrup; cool.
  4. Pour the syrup evenly over the hot kataifi and let it soak in.
  5. Heat the milk with 1/2 cup sugar; whisk in the semolina and cook until thick. Stir in the vanilla, pour the custard over the kataifi, and chill until set, about 1 hour.
  6. Whip the cream to soft peaks, spread over the custard, and top with pistachios. Chill 4 hours before serving.
