Warm, tangy and dressed while the potatoes are still steaming — this is the southern German style of Kartoffelsalat, and it’s a national obsession. A hot broth-and-vinegar dressing soaks into tender potato slices for a salad that’s savory, bright and comforting.

Every family guards its own version, but the golden rules are simple: waxy potatoes, a warm dressing, and plenty of time to absorb. It’s the essential partner to schnitzel, sausages and any backyard grill.

Step by stepInstructions

  1. Boil the potatoes in salted water until just tender, about 20 minutes. Drain, cool slightly, then peel and slice into 1/4-inch rounds.
  2. Whisk the hot broth, vinegar, oil, mustard, sugar, salt and pepper into a dressing.
  3. Toss the warm potatoes with the onion and pour the dressing over them.
  4. Stir gently and let stand 15–20 minutes, stirring now and then, so the potatoes drink up the dressing.
  5. Taste and adjust salt and vinegar.
  6. Fold in the chives and parsley and serve warm or at room temperature.

Slice the potatoes while they're still warm — that's when they absorb the dressing best. If the salad looks dry, splash in a little more hot broth.
