Alheira is a smoked sausage with a storied past, born in Trás-os-Montes from a blend of bread, poultry and garlic rather than pork. Its coarse, golden casing hides a soft, savory filling that sputters and caramelizes in the pan, filling the kitchen with gentle smoke.

Now a beloved tavern staple across Portugal, it is most often served with a runny fried egg on top, boiled potatoes and a heap of dark leafy greens. Pricking the sausage before cooking keeps it from bursting as it turns crisp and irresistible.

Step by stepInstructions

  1. Boil the potatoes in salted water until tender, about 20 minutes, then drain.
  2. Prick the alheiras all over with a fork; cook them in a lightly oiled skillet over medium heat, turning often, until golden and cooked through, 10-12 minutes.
  3. In a separate pan, sauté the garlic in olive oil, add the greens with a splash of vinegar, and cook until wilted and tender.
  4. Fry the eggs sunny-side up in the same pan the sausages cooked in.
  5. Serve each alheira with potatoes, greens and a fried egg on top, with salt and pepper at the table.

💡 Chef tips & storage

Alheiras must be pricked thoroughly before cooking or they will burst. Look for a sausage with a high bread-to-meat ratio for the classic soft, spreadable texture.
