Speculaas

Speculaas are the Netherlands’ spiced holiday biscuits — thin, deeply caramel-colored cookies scented with cinnamon, nutmeg, cloves, and white pepper, traditionally pressed with carved wooden molds into intricate winter scenes. They are the treat of Sinterklaas (December 5), when Dutch children set out a shoe for Saint Nicholas and find speculaas in the morning. Crisp, fragrant, and impossibly moreish, they are the taste of a Dutch winter.

Why this recipe works: The dough is a firm, short-style dough built on brown sugar and butter, heavily spiced with the classic speculaas blend — cinnamon, nutmeg, cloves, ginger, cardamom, and a touch of white pepper for warmth. It is rolled thin and pressed with a carved wooden mold (or cut into shapes), then baked until crisp and dark golden. The resting of the dough is what deepens the spice flavor.

Key ingredients

  • Brown sugar and butter: the caramel color and flavor.
  • The speculaas spice blend: cinnamon, nutmeg, cloves, ginger, cardamom, white pepper.
  • Flour and baking powder: the crisp structure.
  • A little milk and almond extract: the binder and perfume.

Tips for perfect speculaas

Rest the dough in the fridge for at least a few hours — or overnight — so the spices meld and the dough firms up for crisp baking. Roll it thin, about 1/4 inch, and press firmly into a carved wooden mold, or cut with cookie cutters. Bake at 350°F until deep golden at the edges, 10 to 12 minutes; do not overbake, they continue to crisp as they cool. Store in an airtight tin — they keep for weeks.

Variations and storage

Dip the baked cookies in chocolate for an indulgent twist, or add a spoonful of candied peel. Speculaas keep 3 weeks in an airtight tin at room temperature — they are built for the holiday season — and freeze well for 3 months.

Step by stepInstructions

  1. Rub the butter into the flour with the sugar, spices, baking powder, and salt until crumbly.
  2. Add the egg and press into a smooth dough; wrap and chill for at least 1 hour.
  3. Roll the dough about 1/4 inch (6 mm) thick and cut with cookie cutters (or press into a wooden speculaas mold).
  4. Arrange on parchment-lined trays, brush with milk, and press an almond half into each cookie.
  5. Bake at 350°F (175°C) for 12–15 minutes until lightly browned at the edges.
  6. Cool on the tray for 5 minutes, then transfer to a rack.

💡 Chef tips & storage

The dough must be cold or the shapes blur. Bake until just golden — speculaas should be crisp, not hard.
