In the westernmost corner of Austria, Käsespätzle has been the shepherd’s staple for centuries: homemade noodles, Alpine cheese, and onions cooked until they’re jammy and sweet. It’s served in every mountain hut, usually with a green salad on the side.

Step by stepInstructions

  1. Whisk the flour, salt, and nutmeg with the eggs and water into a thick, stretchy batter. Rest 15 minutes.
  2. Melt 2 tablespoons of the butter in a skillet over medium-low heat. Cook the onions with the sugar and caraway 20-25 minutes, stirring often, until deep golden brown.
  3. Press the batter through a spätzle maker or coarse sieve into a pot of boiling salted water. Cook 2-3 minutes until the noodles float; drain.
  4. Preheat the oven to 400°F and butter a baking dish. Layer half the spätzle, half the cheeses, the rest of the spätzle, and the remaining cheese on top.
  5. Bake 10-12 minutes until the cheese is molten and golden at the edges. Top with the caramelized onions, chives, and pepper, and serve hot.

💡 Chef tips & storage

Caramelize the onions properly — low heat and patience — they're the sweet crown of the dish. A quick minute under the broiler gives the top a deliciously browned crust.
