Vienna’s thinner-than-thin pancake

Palatschinken came to Austria from the Hungarian palacsinta, and Vienna adopted them wholeheartedly. Unlike French crêpes they’re made with flour, milk, eggs, and a pinch of salt, then folded into triangles around jam — apricot being the eternal favorite.

Step by stepInstructions

  1. Whisk the flour, eggs, milk, salt, sugar, vanilla, and melted butter into a smooth, thin batter. Rest 15 minutes.
  2. Heat a lightly buttered 8-inch crêpe pan over medium heat. Pour in a small ladle of batter and swirl to coat the bottom thinly.
  3. Cook 1-2 minutes until the underside is golden, then flip and cook 30 seconds more. Slide onto a plate and repeat, stacking the finished pancakes.
  4. Spread each warm pancake with apricot jam, fold in the sides, and roll into a tight log.
  5. Dust generously with powdered sugar and serve warm.

The first pancake is always a test — don't panic. Keep the batter thin and the pan medium-hot so the palatschinken stay tender, never rubbery.
