A groaning platter of smoked pork loin, knackwurst, sauerkraut, and bread dumplings — the farmer’s feast that’s been feeding Austrian taverns for centuries.

The Gasthaus platter

Bauernschmaus — ‘farmer’s feast’ — is what you order when you want the whole Austrian countryside on one plate: smoky pork, snappy sausages, tangy sauerkraut, and dumplings to mop up the juices. It’s the food of harvest celebrations and long winter lunches.

Step by stepInstructions

  1. Preheat the oven to 350°F. Place the smoked pork loin in a roasting pan with 1 cup of water, cover with foil, and heat 40-45 minutes.
  2. Meanwhile, warm the sausages in barely simmering water for 15 minutes.
  3. Melt the bacon fat in a large pot and cook the onion 5 minutes. Add the sauerkraut, caraway, apple, and wine; cover and simmer 30 minutes.
  4. Arrange the sliced pork, sausages, sauerkraut, and dumplings on a large warm platter.
  5. Sprinkle with parsley, spoon over some of the roasting juices, and serve with the mustard.

💡 Chef tips & storage

Everything can be kept warm in the oven for a while — this is the ideal make-ahead feast for a crowd. The grated apple softens the sauerkraut's sharp edge beautifully.
