Halušky

Halušky is Slovakia’s beloved national dish — soft, pillowy potato dumplings tossed with tangy bryndza sheep cheese and topped with crackling crisp bacon. Each spoonful is a perfect contrast of rich, salty, and wonderfully sour.

Traditional bryndzové halušky is served with a splash of the rendered bacon fat, and purists insist it must be eaten with a fork, straight from the pan. It’s mountain food at its finest, built for long winters and good appetites.

Step by stepInstructions

  1. Wrap the grated potatoes in a kitchen towel and squeeze out as much liquid as possible.
  2. Mix the potatoes with the flour, egg, and salt to form a soft, sticky dough.
  3. Bring a large pot of salted water to a boil. Drop teaspoonfuls of dough into the water — or push the dough through a halušky sieve — and cook 3-4 minutes until the dumplings float and are cooked through.
  4. Fry the bacon in a skillet until crisp; set aside, reserving the fat.
  5. Mash the bryndza with the milk and sour cream to make a smooth sauce. Toss the hot dumplings with the cheese mixture.
  6. Serve topped with the crispy bacon, a drizzle of bacon fat, and black pepper.

💡 Chef tips & storage

Squeeze the potatoes very dry or the dumplings will turn gummy. If bryndza is hard to find, feta blended with sour cream is a close stand-in.
