Tender strips of beef simmered in a velvety mushroom sauce with a swirl of sour cream — beef stroganoff is the Russian classic that conquered dinner tables everywhere. Quick enough for a weeknight, elegant enough for guests, it is pure comfort in a bowl.

Traditionally served over egg noodles, buckwheat kasha, or crisp fried potatoes, stroganoff is finished with a flourish of fresh dill. The sauce comes together in minutes, so have everything prepped before the pan gets hot.

Step by stepInstructions

  1. Pat the beef dry and season with salt and pepper.
  2. Heat the butter and oil in a large skillet over high heat and sear the beef in batches until browned; transfer to a plate.
  3. Reduce the heat to medium, add the onion and mushrooms, and cook until golden and their liquid evaporates, about 8 minutes.
  4. Sprinkle with flour, stir for 1 minute, then whisk in the broth and mustard and simmer until slightly thickened, about 5 minutes.
  5. Return the beef and any juices to the pan, stir in the sour cream, and heat gently without boiling for 3-4 minutes.
  6. Season to taste, scatter with dill, and serve over noodles or kasha.
