Blueberry grunt comes straight from the Nova Scotia woods, where wild lowbush blueberries grow in rocky barrens and cooks simmered them over the fire in a cast-iron pot. The name is onomatopoeia: as the berries stew and the dumplings steam, the pot lets out a soft, satisfied grunt.
It is a humble dessert with a brilliant trick — spoonfuls of biscuit dough dropped over the bubbling berries, then steamed under a tight lid until light and fluffy. Spooned into bowls with a pour of cream, it is the taste of a Maritime summer evening.
