Before freezers and grocery stores, the Newfoundland pantry held dried peas and salt pork, and out of those two humble ingredients came one of the province’s great soups. The peas would soak overnight and then simmer for hours with a piece of salt pork or a leftover salt beef bone, turning thick and golden. On a cold, blowy day, a steaming bowl of pea soup was the difference between shivering and being warm to the bone. Many a family ate it with toutons or doughboys floating in it like little dumplings.

What makes it great is that slow, patient simmering that turns plain yellow split peas into a rich, velvety soup with a deep, smoky-savoury flavour from the pork. It’s frugal, filling and endlessly forgiving — you can add more vegetables, more water or more pork and it will still be perfect. Serve it with a splash of vinegar or a grind of pepper, and save the salt pork to chop back into the pot.

Step by stepInstructions

  1. Soak the split peas in cold water overnight, then drain and rinse them.
  2. Place the peas, salt pork, onion, bay leaf and cold water in a large pot and bring to a boil.
  3. Reduce the heat, cover and simmer for 1 1/2 hours, stirring now and then so the peas don't stick to the bottom.
  4. Add the carrots and potatoes and simmer for another 30 minutes until everything is soft and the soup is thick.
  5. Lift out the pork, chop it into bite-size pieces and stir it back into the pot.
  6. Season with plenty of black pepper, taste before adding any salt, and ladle out steaming bowls.

💡 Chef tips & storage

Soaking the peas overnight cuts the cooking time and keeps the soup creamy. Stir often near the end — split pea soup loves to scorch on the bottom of the pot.
